Mitsuharu “Micha” Tsumura is a Japanese-Peruvian chef who trained in the United States and Japan before returning to Lima to build a culinary legacy. Born in Lima to Japanese parents, Micha created Maido to showcase his heritage and push the boundaries of nikkei cuisine.
